HEALTHY SNACKS

Happy New Year. Last week I posted a poll over on Instagram, and most of you voted that I have blog posts published on Tuesdays & Thursdays. I'm going to try my very best to make that happen. Focusing on my blog in 2021 is at the top of my priority list. I don't make resolutions, but I set goals. How about you guys?
Another top priority is to eat more and better. I often get so busy in the rush of life that I forget to sit down and eat a proper meal. Lunch is always the hardest for me to commit to. I usually eat a late breakfast, get busy and then by 4 pm, I'm starving, so I snack while I'm making dinner, and then by the time I'm finished, I'm not overly hungry for dinner, which means by 7 pm, I'm snacking again. Admittingly my snacks aren't healthy handfuls; they are often peanut M&M's, a handful of chips, some of my Chocolate covered almond bars etc., lol, you get the pictures. While I have good intentions, I know that it's inevitable I'm going to reach for a handful of something throughout the day, so I've been using my weck jars to prepare "healthy handfuls."
The first recipes I made using our new Air Fryer (I LOVE this thing! More on that later)
Sweet & Spicy Nuts
Ingredients
Instructions
- Using a large bowl, mix the nuts.
- Add the Oil, Syrup, Spices, and toss until well combined.
- Place in the air fryer basket and cook at 320 degrees for 10 minutes stopping at 5 mins to stir.
I've been making this mix in the over for years and love it, but sometimes the maple syrup caramelizes a little more than I like, and it makes the nuts sticky or hard to chew. I was skeptical about using the air fryer, but I'm so glad I did!
Raw Nut Mix

- Add everything into a bowl and mix.
You can store both recipes in air-tight jars for up to two weeks, but I bet they won't last that long.
